
Assisting the F&B Business Analyst Cost Control to keep the management team informed of day-to-day, F&B cost issues and opportunities. Providing storage and issuance of F&B items. Depending on the abilities and progression of the trainee, assist in menu planning, production and portion control, pricing, reporting and being point of contact for MICROS system. Assist in the daily deliveries and dispatch to all the departments.
MAIN DUTIES AND RESPONSIBILITIESChecking, delivering and booking of inventory items changes between departments (Requisitions)
Organize and communicate the food costs on a daily basis
Regular inspection of quality and state of items in food storerooms (FIFO), expiry date check
Control F&B item spoilage in F&B outlets
Assisting the F&B Business Analyst with input and reporting in the monthly closing cycle
Assisting the F&B Business Analyst in the costing and pricing of new menu items (Adaco)
Calculate and process the allocation of the monthly ‘house charge’
Be a point of contact for the Point Of Sale System
Heed on a proper compliance of the Marriott policy concerning storerooms with great emphasis placed on the security of inventories
Processing package deliveries
Assist the Receiver with the processing and quality checks of the daily fresh food deliveries and storage
Responsible for re-fill/re-stock of the wundermark-shop in the lobby and spot checks
Book the daily receiving in the purchasing system (Adaco)
