The Role

Opening at Crown Melbourne in 2027, Mott 32 Melbourne will bring globally celebrated Chinese cuisine, exceptional craftsmanship and award-winning hospitality to Australia's most prestigious integrated resort destination.

As Executive Chef, you will be responsible for establishing and leading the culinary direction of this landmark venue, ensuring every dish reflects the authenticity, innovation and excellence that have made Mott 32 an internationally recognised brand.

Working closely with the General Manager, Crown's culinary leadership team and Mott 32's global stakeholders, you will play a pivotal role in the pre-opening, launch and long-term success of the business.

This role demands an exceptional culinary leader with deep expertise in premium Chinese cuisine, strong commercial acumen and the ability to inspire high-performing teams to deliver world-class dining experiences at scale.

In this role you will:

• Lead the successful pre-opening, launch and ongoing culinary operation of Mott 32 Melbourne.
• Develop and execute a world-class culinary strategy that reflects the globally recognised Mott 32 brand.
• Build, mentor and inspire a high-performing kitchen brigade, creating a culture of excellence, accountability and continuous improvement.
• Ensure exceptional food quality, consistency and presentation across every service.
• Drive operational and commercial performance through effective labour, food cost and inventory management.
• Partner closely with restaurant leadership to deliver seamless guest experiences and operational excellence.
• Maintain the highest standards of food safety, compliance and quality assurance across the kitchen operation.
• Champion innovation while preserving the authenticity and integrity of Mott 32's culinary philosophy.
• Identify opportunities to enhance profitability, productivity and overall business performance.
• Serve as a visible and influential leader, developing future culinary talent and fostering a culture of collaboration and high performance.

About You

You are an accomplished culinary professional with an outstanding reputation for leadership, innovation and excellence within premium dining environments.

You have a proven ability to lead large-scale kitchen operations, inspire diverse teams and consistently deliver exceptional food experiences that exceed guest expectations.

Most importantly, you possess the vision, credibility and expertise required to establish Mott 32 Melbourne as one of Australia's premier dining destinations.

• Proven experience as an Executive Chef or senior culinary leader within luxury restaurants, internationally recognised hospitality brands or premium hotel environments.
• Extensive expertise in Chinese or Cantonese fine dining, with a deep understanding of authentic culinary techniques and premium ingredients.
• Demonstrated success leading large and diverse culinary teams in high-profile dining operations.
• Strong commercial acumen with experience managing budgets, labour costs, food costs and operational performance.
• A track record of delivering exceptional guest experiences through culinary excellence and innovation.
• Outstanding leadership, communication and stakeholder management skills.
• Experience in pre-opening restaurant projects will be highly regarded.
• A genuine passion for mentorship, team development and creating unforgettable dining experiences.
