Aids in strategic planning with regard to the direction of the food department. Assists in analyzing current food trends to determine viability of the operation. Develops long-range planning goals for the kitchen operation, including capital needs based upon new technology, manpower needs (for the company and the individuals), and product needs (addressing quality, availability and pricing) that will provide for continual growth of the operaations.

· Product, and recipe testing/development along with menu & special function menu development/planning

· Delivers clear direction to the staff regarding the current and future objectives of the food operation.

· Standardize production recipes to ensure consistent quality

· Ability to offer culinary instruction and/or demonstrate culinary techniques.

· Delivers planning messages in a clear, articulate manner to the executive and managerial teams, as well as the culinary staff.

· Maintains all facilities, equipment and work areas in a sanitary condition and operating as per health codes.

E Culinary Degree preferred.

Ten plus years in culinary management with three to five years in executive management.

Casino experience in a leadership role required.
