Job Description

Four Pillars is looking for an experienced Distiller to join our Production team in Healesville on a Permanent Full Time basis. This is an exciting opportunity for someone who has developed solid distilling experience and is ready to take the next step in their career within one of Australia's leading beverage businesses.

About the Role

Reporting to the Head Distiller and Production Manager, you'll play a key role in producing our award-winning spirits, ensuring every batch meets the exceptional quality standards Four Pillars is known for. You'll work across the full production process - from mashing, distillation and blending through to quality control, packaging support and continuous improvement initiatives.

This is a hands-on role where no two days are quite the same. You'll collaborate closely with the wider production team, contribute ideas to improve processes, and help maintain a safe, efficient and high-performing distillery.

What You'll Be Doing

  • Operating stills and supporting the production of Four Pillars spirits.
  • Preparing botanicals, ingredients and production equipment.
  • Monitoring distillation runs and maintaining accurate production records.
  • Conducting quality checks throughout the production process.
  • Supporting blending, bottling and packaging activities as required.
  • Performing cleaning, sanitation and routine equipment maintenance.
  • Maintaining high standards of food safety, quality and workplace safety.
  • Assisting with stock management and inventory control.
  • Identifying opportunities to improve production processes and efficiency.
  • Working collaboratively across the production team to achieve daily production targets.

About You

You'll bring hands-on distilling or beverage production experience and enjoy working in a fast-paced, quality-focused manufacturing environment. You're practical, detail-oriented and take genuine pride in producing an exceptional product.

You'll also have:

  • Experience operating distillation equipment or similar beverage production processes.
  • A strong understanding of quality systems, hygiene and food safety practices.
  • Excellent attention to detail and a commitment to consistency.
  • The ability to troubleshoot production issues and think proactively.
  • Strong organisational skills and the ability to manage competing priorities.
  • A collaborative approach and willingness to support the wider team.
  • A current forklift licence (or willingness to obtain one) is advantageous.
  • A genuine passion for craft spirits, innovation and continuous learning.

Why Four Pillars?

At Four Pillars, we're passionate about creating exceptional spirits and memorable experiences. As part of the Lion family, you'll enjoy the best of both worlds—a creative, entrepreneurial craft business backed by the support and opportunities of one of Australasia's leading beverage companies.

In return, you'll enjoy:

  • Working with an internationally recognised craft spirits brand.
  • Opportunities to develop your technical distilling skills.
  • Career development within Four Pillars and the broader Lion business.
  • A collaborative, passionate and supportive team culture.
  • Product allowances and staff discounts.

If you're passionate about spirits, love working with your hands and want to help create some of Australia's most celebrated gins, we'd love to hear from you.
