About the job

Based at the Mandarin Oriental, Hong Kong within Food & Beverage Division in Hong Kong, the Director of Operations, Terrace Boulud is the custodian of Terrace Boulud's business strategy and long-term success. The Director of Operations is expected to think beyond traditional restaurant management and operate as the Chief Executive of the business unit, constantly evaluating opportunities to improve competitiveness, increase market share, maximise revenue streams and strengthen guest loyalty. The Director of Operations reports to the Director of Food & Beverage.

As Director of Operations of Terrace Boulud, you will be responsible for the following duties:

  • Lead Terrace Boulud as a standalone business, driving revenue growth, profitability, market share, and long-term success
  • Develop and execute strategic business plans according to the budgets and forecasts, and commercial initiatives to achieve financial targets
  • Strengthen the restaurant's market position through innovative partnerships, brand activations, events, and guest engagement strategies
  • Champion exceptional guest experiences by maintaining world-class hospitality standards and building strong relationships with VIPs and key stakeholders
  • Oversee all aspects of restaurant operations, ensuring excellence across service, culinary, beverage, and reservations functions
  • Drive operational efficiency, productivity, and continuous improvement while preserving luxury service standards.
  • Manage financial performance, including budgeting, cost control, profitability, and business performance reporting
  • Build, develop, and inspire a high-performing team through strong leadership, succession planning, coaching, and talent development
  • Create and deliver signature dining experiences, private events, and strategic collaborations that enhance brand visibility and commercial results
  • Ensure compliance with all food safety, health and safety, licensing, statutory, and company standards while safeguarding business integrity

As Director of Operations of Terrace Boulud, we expect from you:

  • Degree holder in Hospitality Management, Business Administration or a related discipline
  • Minimum 10 years of relevant experience in luxury hospitality, with at least 5 years in a management role
  • Proven track record in driving revenue growth, profitability and overall business performance
  • Strong commercial acumen with experience in budgeting, forecasting, financial management and strategic planning
  • Demonstrated ability to develop successful partnerships, events, brand activations and guest engagement initiatives
  • Strong understanding of luxury dining operations, guest experience management and service excellence
  • Inspirational leader with proven experience in building, developing and retaining high-performing teams
  • Excellent stakeholder management, communication and relationship-building skills
  • Strong analytical and problem-solving abilities, with a results-driven and entrepreneurial mindset
  • Excellent written and spoken English; Cantonese and Putonghua would be an advantage
  • Sound knowledge of quality standard, Forbes, LQE, food safety, HACCP, health and safety, and regulatory compliance requirements
