The Repulse Bay, a wholly owned business of The HongKong and Shanghai Hotels group (owner and operator of The Peninsula Hotels and The Peak Tram), is seeking a Director, Food & Beverage to lead and transform its dining, events and banqueting proposition as part of the property’s transformation. This is a senior role for a commercially minded and service-led F&B leader who can strengthen operational performance, elevate guest and resident experience, drive F&B activations, and position The Repulse Bay as a rejuvenated lifestyle, dining and events destination.The successful candidate will bring strong commercial discipline, operational leadership and creative thinking, with the ability to optimise performance, improve processes, introduce technology-enabled ways of working, and build partnerships with high-profile event organisers, cultural platforms and marquee luxury brands.

Key Accountabilities
- Lead the overall F&B operation for The Repulse Bay, including restaurants, events, banqueting and related F&B services.
- Drive commercial and operational optimisation across revenue, pricing, menu engineering, cost control, labour productivity, profitability and service performance.
- Build a stronger events and banqueting proposition, covering weddings, corporate events, social occasions, resident events and destination-led activations.
- Partner closely with Sales and Marketing to develop seasonal campaigns, dining programmes, F&B activations and experiences that build awareness, traffic, spend and repeat patronage.
- Develop partnerships with high-profile event organisers, cultural platforms, lifestyle collaborators and marquee luxury brands to support TRB’s destination positioning.
- Strategise F&B activations to strengthen The Repulse Bay’s appeal as a rejuvenated lifestyle, dining and events destination.
- Lead improvement and technology-enabled transformation across F&B , events and resident services, using systems, data, workflows and digital tools to improve booking journeys, service efficiency, reporting, customer insight and operational control.
- Develop innovative F&B offerings and service models for residential tenants, including resident dining programmes, in-residence catering, curated seasonal menus, private event support and personalised hospitality touchpoints.
- Translate the Managing Director’s business plan into clear F&B priorities, performance targets, outlet plans, event sales actions and operating standards.
- Strengthen event readiness by working closely with Operations, Estate Management, The Club, Security and Risk, Health and Hygiene, Technical Services and Sales and Marketing.
- Use guest, resident and tenant feedback, market insight and performance data to improve concepts, menus, event packages, activations, processes and ways of working.
- Lead, coach and develop the F&B team, building a commercially minded, service-led culture with strong accountability and disciplined performance management.
General Requirements
- Minimum 10 years’ experience in F&B, events, banqueting or hospitality operations, including at least 5 years in an F&B leadership role with commercial and people accountability.
- Strong knowledge of F&B operations, events and banqueting, commercial performance management
- Proven experience building events, banqueting, activation or destination-led F&B programmes in a luxury hotel, private club, lifestyle venue or mixed-use asset.
- Strong commercial mindset, with the ability to turn concepts, partnerships and activations into profitable and well-executed experiences.
- Degree or above in Hospitality Management, Food & Beverage Management, Business Administration or a related discipline.
