Role:

Amanyara invites you to join our team in Turks and Caicos, as a Food & Beverage Director. With a deep commitment to Aman’s philosophy of exceptional service, you will play a key role in leading a dynamic and talented team, creating seamless guest experiences, offering thoughtful, intuitive hospitality in an atmosphere of understated elegance. This hands-on role reports to the General Manager and requires you to be innovative, charismatic and driven.

RESPONSIBILITIES:

Administration

  • To effectively manage and develop the Food and Beverage operation, ensuring that all property and AMAN standards are implemented, adhered to, improved when necessary and meets international standards.

  • Interviews, manages, trains and develops the F&B team members which includes conducting probationary reviews, annual appraisal, regular performance. feedback discussions and ensures proper transfer of knowledge & skills is taking place through a documented mentoring process.

  • Prepares reports summarizing food and beverage profitability, customer satisfaction, etc

  • Provides employees with the tools and environment they need to deliver the company experience.

  • Communicate regularly with F&B staff and conduct effective staff briefing.

  • Establish systems which monitor the achievements of departments goals.

  • Oversee Micros Operation.

  • Development and maintenance of all department control procedures.

  • Attend monthly P&L meetings and other meetings requested by GM

  • Prepare and regularly update procedures/training manuals.

  • Any other duties assigned by the GM

Operational

  • To monitor and control stock levels to ensure F&B items are always available.

  • To ensure that all handling procedures for all perishable foods or beverages are followed in order to guarantee maximum sanitation and quality of the finished product.

  • To ensure that wastage and spoilage of products are maintained to the minimal level.

  • To be present during the main meal periods in the Restaurant and bar area and special events to interact with all guests.

  • Proactively handle guest issues / complaints, ensuring that the conclusion is satisfactory for all parties.

  • Researches customer preferences and develops menus that incorporates local foods and flavors in a fine dining experience.

  • Interact daily with the Resort and F&B management team to assure that food production consistently exceeds the expectations of the guests.

  • Seeks out sources for fresh food; monitors all produce and meat for freshness.

  • Tailors menu based on product availability; create distinctive daily specials that incorporate seasonal or special-order ingredients.

  • Evaluates food products to assure that quality standards are consistently attained and ensures that all safety and sanitation policies when handling food and beverage are in compliance with the food safety standards.

  • Oversee the ordering of wines, liquors and cigars to ensure appropriate quantities and sufficient lead times, particularly in advance of peak periods

  • Arrange for regular wine training for staff and ensure wine is stored and served correctly.

  • Maintain cocktail menu, wine list and mini-bar menus

  • Oversee the arrangements (venue, menu, decoration etc.) for guest private dinners.

  • Regularly review all menus to ensure they are current, accurate and in good condition

  • Inventory, order and maintain all food and beverage supplies and equipment including vehicles assigned to the department.

  • Ensure guest preferences are recognized and noted, communicated between all F&B staff during a guest stay and passed on the FOM for input into Fidelio (if not already part of existing history).

  • Handle all Food and Beverage inquires and ensure timely follow up.

Financial

  • Prepare all monthly F&B reports as requested by the GM or DOF

  • Prepare reports summarizing F&B profitability

  • Assist DOF with Budget for F&B supplies, Capex

  • Critique P&L review, answer related questions to Food and Beverage

  • Manage Food and Beverage cost.

  • Manage Labor cost

Requirements

  • 5 - 10 years’ leadership experience in Food and Beverage at an international luxury resort.

  • A bachelor's degree in Hospitality Management and Beverage Management.

  • Strong knowledge of food and beverage, including wine and cocktails.

  • Proficiency in English is essential, and any additional languages are a strong asset.

  • Strong leadership and team management skills.

  • Exceptional communication and interpersonal skills to provide a personalized guest experience.

  • Ability to work in a fast-paced environment while maintaining attention to detail and professionalism.

  • Creativity and trend awareness in beverage and service innovations.

  • Strong problem-solving skills and the ability to handle guest inquiries or concerns with tact and efficiency.
