Salary Range: $95,000.00 - $110,000.00 Salary/yearThe Director of Bar Operations has complete responsibility for oversight of all Bar Operations on all restaurant, bar and hotel properties and is directly responsible for ensuring team members are trained, and practice responsible alcohol awareness and provide exemplary guest service. This position will be responsible for oversight of all Bar operations in conjunction with individuals’ location General Managers, to include vetting of employee candidates, hiring decisions, training, scheduling, coaching and counseling, auditing/inspecting work to ensure standards are met, promoting teamwork and inclusiveness, and conducting performance reviews of bar operations team members.

Essential Duties & Responsibilities include but are not limited to the following
- Enforce compliance of the alcoholic beverage commission regulations, including abiding by all CUP/CUB requirements the respective locations’ alcohol license is subject to, as well as any and all required training by governing authorities.
- Monitor associates for adherence to all applicable alcohol authorities’ laws.
- Work with the Beverage Director, as may be applicable or necessary, to create/manage/maintain all beverage programs, optimizing efficiency for each individual supported concept/business, and develop systems and processes to identify efficiencies and to optimize COGS and labor costs in all areas of responsibility.
- Create/manage/maintain Standard Operating Procedures for beverage programs at all properties for the purposes of ensuring consistency, accountability, profitability, and guest satisfaction. This includes development and monitoring of inventory and ordering SOP’s.
- Maintain positive client and guest relations; respond to client requests and ensure alignment with company standards; identify opportunities for creating awareness and engagement with surrounding communities; investigate and follow through on client and guest complaints.
- Work with Beverage Director as may be applicable or necessary, to develop, manage and optimize bar menus at all full service bars, and beer and wine menus at limited service locations, to optimize operations and cost efficiencies.
- Establish and maintain relationships with all beverage program suppliers and distributors for all properties.
- Work to set budgets and goals, and set strategy to achieve those related to Bar operations by contributing information and recommendations to strategic plans and reviews; preparing and completing action plans; implementing production, productivity, quality, and customer-service standards; determining system improvements and implementing change.
- Monitor performance against budgeted revenue and profitability targets thru fiscal periods for all Bar operations; recommend and establish pricing and portions for products and services within approved profit and plan guidelines. Manage operating expenses and labor costs.
- Identify opportunities for expansion of bars and beverage programs within the portfolio of properties, as well as helping to identify opportunities for developing new locations.
- Works to ensure that product inventory is being completed on site at each location on a timely basis in accordance with guidance from Accounting support teams.
- Working with General Managers to develop programming at each location with the intent of driving customer traffic.
- Other duties may be assigned to meet business needs.
Supportive Functions:
- Sales and profits
- Develops and implements creative and targeted sales-building strategies for assigned locations to ensure optimal sales and earnings
- Assists in the annual preparation of sales projections, expense budgets, and capital expenditure budgets
- Meets or exceeds budgeted sales in the Area.
- Maximizes profits by controlling expenses within established budget guidelines
- Identifies, evaluates and responds appropriately to labor efficiency problems
- Assists restaurant and bar leaders in identifying sales growth opportunities in restaurant and bar merchandising and outlet marketing ideas
- Executes and is accountable for all controllable financial results on a period basis according to plan
- Ensure all bars meet or exceed Operations and Quality Standards
- Performs visitations at each restaurant, bar, and/or hotel on a frequent basis to ensure bar staff understands strengths and developmental opportunities as they relate to quality standards. Provides a summary of visitations to company leaders.
- Completes follow-up visitation reports for each bar operation noting strengths and areas of opportunities on an ongoing basis.
- Develops and implements action plans to rectify negative assessments
- Ensures professional and consistent bar team image through adherence to cleanliness, uniforms, and appearance standards
- Follows and enforces compliance with all brand mandates, standards, company policies, and procedures
Hospitality, Culture, and Community Involvement
- Responds immediately to all customer issues to ensure guest satisfaction has been achieved
- Checks with restaurant and bar staff regularly to monitor employee and guest satisfaction, interaction, and engagement for their area
- Monitors progress of the Bar Manager's/Team Leaders ability to invoke positive change among their team
- Responsible for providing direction to General Managers and bar leaders with regards to achieving the standard that is established in our values
- Understands and is capable of telling the "story" of the bar/restaurant(s), how it was started, what it means and how it relates to communities in which our restaurants are located
- Promotes corporate citizenship and social responsibility
- Recruiting and Retention
- Responsible for management staffing, training, retention and turnover
- Maintains management staffing in each Area according to budgeted levels
- Forecasts management staffing needs with HR
- Works collaboratively with HR to create and maintain plans for developing internal candidates for promotion
- Conducts interviews to assist General Managers with store level staffing
- Collaborates with HR to conduct exit interview process with all management that leave the company
- Works, as applicable and necessary, with Beverage Director to engineer beverage menus to maximize profit and minimize cost, to include dynamic pricing strategies for all outlets
- Identifies opportunities for partnerships with suppliers, spirit brands and local organizations for activations and pop up's
Training
- Conducts training for managers and bar staff on new products and refresher training as necessary
- Trains Managers in changes in company policy, menus, recipes, or procedures
- Helps Managers in identifying potential problems and develops solutions
- Works with Corporate Team to train Managers in use of performance development tools
- Ensures proper training of Manager Trainees and monitors effectiveness of designated training stores within the region
People Development
- Develops managerial and leadership abilities of restaurant management staff to ensure succession planning is occurring at all levels.

- Conducts meetings with restaurant management team on a regular basis
- Ensures Bar Managers have meetings with bar staff on a regular basis
- Conducts performance development reviews on bar staff and collaborates with HR on the staff members individual development plans (IDP).

Team Member Relations
- Accurately and consistently documents (and requires Bar Manager to document) performance appropriately
- Responsible for following the approved termination process as outlined in the Employee Handbook
- Uses consistent practices in managing performance problems
- Conducts investigations as required for cash, harassment or any unfair employment practices. Requests assistance from HR as needed for advice
- Coaches bar staff for improved performance
- Identifies, evaluates and responds appropriately to labor efficiency problems
- Works with service and culinary management team to define potential issues/problems and assist the restaurant management team in building solutions
- Solicits, listens to and responds to staff feedback on recommendations for improving service, employee and guest relations.
Policies and Procedures
- Ensures compliance on procedure outlined in all restaurant reference manuals
- Ensures compliance on company cash control, and safety and security policy
- Monitors Internal Audit Controls within each restaurant on a frequent basis
- Ensures accidents and incidents are reported to HR in a timely manner
- Monitors procedures for resolving Health Department violations promptly
- Helps to monitor employee files and payroll records in accordance with company guidelines
- Monitors compliance with all Equal Employment Opportunity and labor laws (state/federal)
- Ensures compliance with HR/Financial Audits
- Ensures that proper I-9 identification and required information is in compliance during on-boarding
Administration
- Completes all required financial reports accurately
- Responds to weekly and period P&L statement and take corrective action as necessary
- Reviews all other company generated reports to ensure that proper control and performance is being maintained
- Researches and processes invoices in a timely manner
- Reports weekly numbers to leadership in a timely manner
- Provides and maintains monthly calendars of events, meetings, and store requirements
- Completes expense reports, including providing all receipts and submitting on a timely basis as required.
- Ensures the Bar Staff complete cash audits nightly.
- Processes Payroll information in a timely manner by making sure Bar Manager's submit and approve labor hours on time.
- Responds to emails, both internal and external, on a timely basis

Qualifications

Qualifications
- Four (4) year degree in Hospitality, Restaurant, Foodservice or equivalent combination of education and experience.
- Five years (5) progressive management experience in multi-unit beverage operations including exceptional knowledge of spirits, wine, beer in a high volume F&B environment.
- ServSafe Certification, and California approved state certification for responsible alcohol service
- Highly organized, detailed oriented, and ability to adapt quickly to changing priorities
- Strong written, verbal and interpersonal communication skills
- Strong POS operational and programming experience.
- Knowledge of government health, hotel, or food service regulations.
- Proficient in operational financial management accountability and budgeting .
- ServSafe Certification, and California approved state certification for responsible alcohol service
- Extremely organized, detail oriented, and ability to adapt quickly to changing priorities
- Excellent written, verbal and interpersonal communication skills
- Expert knowledge of government health, hotel, or food service regulations.
- Expert in operational financial management accountability and budgeting.
- Able to work 45-55 hours per week.
