The Director of Food & Beverage Business Development drives strategic growth by leading third-party R&B partnerships, executing F&B repurchase program and establishing centralized cloud kitchen supply chains to maximize increase revenue and operational efficiency in Greater China. The role is also to focus on strategies to grow F&B revenues to enable the department to utilize the funds to add resources, based in mainland China either Shanghai, Guangzhou, or Beijing office.

CANDIDATE PROFILE

Education & Experience

  • At least 2 years’ degree from an accredited university, in Hospitality Management, Business Administration, or related major is preferred.
  • 10 years’ experience in the food and beverage and generally in hotel operations in all levels of the operation and preferably a deep knowledge and understanding of global food & beverage concepts.
  • Ideally the person will have experience in running their own business, though not essential.

Skills and Knowledge

  • Demonstrated ability to work in a large international food and beverage and hotel environment
  • Strong presentation and public speaking skills, exceptional project management and organizational ability with effective influencing and negotiation skills
  • Computer skills (Microsoft excel, power point, lotus notes, word processing, internet research, software. Solid knowledge of financial tools (e.g. P&L, ROA, etc.)
  • Negotiating and deal-structuring skills
  • The ability to influence and interface with senior management, primarily owners and owner reps.
  • Demonstrated understanding and use of market research and market trend information.
  • Executes the organization’s mission, goals and objectives and demonstrates through ongoing and direct motivation, communication, group dynamics and leadership.
  • Ability to travel 20%- 35% of available time.
  • Absolute discretion and confidentiality regarding sensitive information.
  • Ability to prepare and review legal agreements.

CORE WORK ACTIVITIES

Manage F&B Direct Digital Partners and Repurchase Program:

  • Oversee and enhance F&B Direct Digital Partners (e.g., third-party operator for WeChat) and national & regional repurchase programs such as Club Marriott, through respective partners and vendors
  • Drive property-level adoption, engagement, and repurchase rates to maximize customer loyalty.
  • Develop scalable processes for off-folio loyalty initiatives to increase program efficiency.
  • Establish standardized operating procedures (SOPs) for contracts, financial workflows, and performance reviews.
  • Maintain and communicate program policies, terms & conditions to stakeholders.
  • Resolve customer conflicts and operational issues in collaboration with subject matter experts and regional teams.
  • Manage legal agreements and finance processes to ensure program compliance.
  • Act as a liaison between customers, hotels, owners and continent policy teams to ensure seamless communication.
  • Collaborate with regional operations team to implement remediation and enhancement efforts for program success.

Manage Third-party R&B Brand and Operator Partnerships

  • Research, identify, and prioritize potential operator partners and third-party brands for strategic collaborations based on suitability, business impact, and latest market trends.
  • Develop compelling, targeted pitch documents for hotel properties and owners to attract prioritized partnerships.
  • Negotiate partnership terms and prepare Letters of Intent (LOIs) for formal agreements.
  • Collaborate with legal to finalize Lease/License Agreements and manage partnerships effectively.
  • Ensure timely delivery of concepts/plans from vendors, operators, suppliers, designers, and consultants for prioritized initiatives.
  • Maintain regional project/deal trackers and signed agreements for accurate documentation.
  • Curate the Marriott Brand Book (MBB) on the MGS platform with prioritized and vetted third-party brand profiles.
  • Develop and update MGS resources (e.g., third-party process guides, brand directory, hotel presentation decks) to reflect prioritized partners and strategies.
  • Align with Design & Development, Operations, and Technical Services for seamless execution of prioritized projects.
  • Support F&B Expanded Services by developing SOPs, preparing agreements, and managing project billing efficiently.

Support on Cloud Kitchen Supply Chain Establishment (Central Kitchen)

  • Collaborate with the GC Director of Culinary to develop and implement a centralized supply chain strategy for cloud kitchens, pulling through pilots and scaling successful models.
  • Optimize costs through go-local procurement of ingredients, equipment, and consumables.
  • Create standardized product portfolios, recipes, and implementation manuals for individual hotels within the central commissary, specifically codifying operational procedures for each major concept.
  • Establish a qualified supplier database and identify a high-performance vendor list.
  • Develop and negotiate commercial terms, service agreements, and compliance standards with approved suppliers to support scaled implementation.
  • Ensure vendor compliance and product integrity across the supply chain in collaboration with Food Safety & Quality teams to enable successful concept rollout.
  • Implement digital supply chain tools for efficient inventory management and logistics coordination during pilot phases and scaled operations.

Managing Projects and Priorities

  • Develops specific goals and plans to prioritize, organize, and accomplish work for self and direct reports.
  • Provides direction and assistance to other teams regarding projects. Determines priorities, schedules, plans and necessary resources to ensure completion of any projects on schedule.
  • Analyzes information and evaluates results to choose the best solution and solve problems.
  • Thinks creatively and practically to develop, execute and implement new plans or programs. Generates and provides accurate and timely results in the form of reports, presentations, etc.
  • Plans, develops, implements, and evaluates the quality of the teams’ operations.
  • Provides recommendations to improve the effectiveness of processes or programs.
  • Understands and meets the needs of key stakeholders.
  • Supports achievement of performance goals, budget goals, team goals, etc.
