Scope and purpose

As a Demi Chef de Partie at the Venice Simplon Orient-Express, a Belmond Train, you will be part of an exceptional culinary team delivering world-class dining experiences aboard one of the most iconic luxury trains in the world.

In this role, you will be a real support of the Chef de Partie and Sous-Chef, ensuring the highest standards of fine dining, presentation, and food quality while creating unforgettable moments for guests throughout their journey. Main duties and responsibilities

• Support the Chef de Partie and Sous Chefs in daily food preparation, production, and recipe execution.
• Produce all necessary food for food service operations as instructed by the Chef de Partie, Sous Chefs, or Executive Sous Chef.
• Ensure that your allocated workstation and equipment are always kept clean, organized, and properly prepped.
• Assist in monitoring stock levels and inform the Chef de Partie of any replenishment needs for your section.
• Maintain quality and strict control in all aspects, from portioning to the freshness of the products presented.
• Assess ingredients for freshness, quality and suitability and report any products not up to standard to help deliver consistent, high-quality finished products.
• Ensure that the production, preparation, and presentation of food always meet the established quality standards.
• Guide and support kitchen steward as required in accordance with set standards.
• Maintain full awareness of all menu items, their recipes, preparation methods, and presentation standards.
• Complete required food safety checks and records, including temperature, cooling and reheating checks, and report deviations promptly
• Ensure correct handling, date-labelling, storage and stock rotation, following first-in, first-out or first-expired, first-out procedures as appropriate.
• Operate and maintain all department equipment properly, and report any malfunctions immediately.
• Ensure clear and effective communication with team members across shifts.
• Strictly adhere to hygiene, safety, and correct usage guidelines for all kitchen equipment and utensils.
• Periodically check expiry dates and proper rotation (FIFO) of food items in your section.
• Monitor waste control to help maintain profit margins.
• Report all potential hazards and maintenance issues immediately to management.
• Understand dietary requirements and allergens and apply necessary alternatives as requested under supervision.
• Carry out any other duties as required by management.

Requirements

• Previous experience as a Demi Chef de Partie within luxury hotels, Michelin-starred restaurants, fine dining establishments, luxury cruises, or premium hospitality environments.
• Good knowledge of fine dining techniques, food preparation, and menu execution.
• Experience working in fast-paced, high-standard culinary operations.
• Strong organizational skills and the ability to manage multiple priorities.
• Knowledge of HACCP, food safety, and hygiene regulations.
• Strong attention to detail and commitment to culinary excellence.
• Ability to work effectively within multicultural and international teams.
• Flexibility to travel extensively across Europe and work varying schedules, including weekends and public holidays.
• Fluency in English; additional European languages are considered an advantage
