Join our Ladies & Gentlemen - Demi Chef de Partie - Banquets

At The Ritz-Carlton, Melbourne, culinary presentations are a statement of craftsmanship. We are seeking a passionate Demi Chef de Partie to help our Banquets Team in delivering exceptional dishes on a Full-Time basis.

• Preparation and production of all hot or cold food items for buffet and/or a la carte menu to ensure that they are in compliance with the prescribed recipes and specifications.

• Supports and ensures compliance with all Food & Beverage policies, standards and procedures.

• Maintains food preparation handling and correct storage standards.

• Recognizes superior quality products, presentations and flavor.

• Plans and manages food quantities and plating requirements for the food operation (e.g., restaurant, banquet, pastry shop).

• Communications production needs to key personnel.

• Produces production prep list.

• Prior supervisory experience in kitchen required.

• A deep passion for the culinary arts.

• Exceptional technical expertise in culinary techniques.

• Strong creativity and innovation in flavor and presentation.

• Certificate in Commercial Cookery.

• Previous experience in luxury hotels or hatted restaurants is highly regarded.

• A self-motivated and collaborative team player.

• A dedicated individual who strives for continuous growth, excellence, and expanding their culinary horizons.
