At The Ritz-Carlton, Melbourne, culinary experiences are crafted with precision, creativity, and genuine care. We are seeking a passionate Demi Chef de Partie to join our Culinary team on a Full Time basis, delivering exceptional dining experiences for our guests across two of the hotel's most dynamic outlets.

Job Summary

• Prepare and produce high-quality dishes, ensuring all items are presented in accordance with established recipes, standards, and luxury service expectations.
• Support the day-to-day operation of both outlets, maintaining exceptional culinary and service standards.
• Ensure compliance with all Food & Beverage policies, food safety regulations, and Marriott International brand standards.
• Maintain correct food handling, storage, and stock rotation procedures.
• Demonstrate a strong understanding of quality ingredients, flavours, and contemporary presentation techniques.
• Assist in managing food preparation, mise en place, and service requirements to meet business demands.
• Communicate production needs and service priorities effectively with culinary and front-of-house teams.
• Contribute to menu consistency, guest satisfaction, and continuous improvement initiatives.
• Support the training and development of junior kitchen team members.

Who We're Looking For

• A genuine passion for hospitality and the culinary arts.
• Strong technical cooking skills with experience across à la carte and high-volume service environments.
• Certificate III in Commercial Cookery (or equivalent).
• Previous experience within luxury hotels, premium restaurants, or high-end food and beverage venues is highly regarded.
• A self-motivated team player with excellent communication skills.
• Ability to perform in a fast-paced environment while maintaining exceptional attention to detail.
