As a Food Services Coordinator, you will lead and support Adult In Custody (AIC) work crews in preparing large‑quantity meals, including cooking, baking, food handling, and storage. You will follow established menus to meet daily nutritional standards while ensuring all sanitation practices meet State Health Codes, DOC policies, and facility expectations. You will also maintain accurate food service and training documentation through established reporting channels.
In this role, you will help maintain a safe and orderly environment by enforcing security procedures, monitoring critical tools, and conducting daily searches of AICs and work areas to prevent contraband. You will respond to incidents, monitor for escape risks, maintain key control, complete AIC counts, and submit all required misconduct or incident reports to facility administration.
You will also oversee food preparation timelines to support efficient cooking practices and reduce waste, ensuring each meal meets quality standards for taste, appearance, and readiness. In addition, you will train AIC crews in sanitation, safe equipment use, cleaning practices, and chemical safety. Other responsibilities may include supervising garden operations, ordering supplies through Center 2, transporting meal trays, and assisting with warehouse and canteen operations as needed.
This position is represented by American Federation of State, County, and Municipal Employees (AFSCME). This position may be eligible for Police & Fire (P&F) benefits through Public Employees Retirement System (PERS), as defined by statute.
A High school diploma, GED certificate, or other proof of education completion at same or higher level AND one year of experience in a commercial food service facility, full-service restaurant, or other food preparing type establishment;
OR
An associate's degree in Food Service Management, Foods and Hospitality Service, or a directly-related field.
Must obtain a Food Handlers Permit within 30 days of hire.
This position works inside a secure adult correctional prison and may encounter angry hostile or abusive AIC’s which could result in personal physical injury, death, or becoming a hostage. Inherent custodial duties include responsibility for handling AIC incidents in the immediate work area. The employee is responsible to prevent escapes from confinement by proper control of keys, tools, equipment, and contraband and to document unusual incidents occurring.
This position is subject to call back to the prison in the event of an emergency and is subject to assignment in any position in the institution.
High noise levels at all times, extreme variations in temperatures. Stands and walks from long periods of time on concrete floors and required to bend for searches. Will be walking on Wet slippery floors and will be required to deal with AIC's on a daily basis. This also includes driving on occasional basis.
Must be able to demonstrate all tasks associated with assigned jobs. This could include lifting up to 50 lbs., actual food preparation, storage methods, and proper cleaning techniques.

The salary range listed above is for non-PERS qualifying applicants. PERS qualifying applicants may be eligible for an adjusted range to reflect an additional 6.95%.
