Job Description

The Commis I – Pastry is responsible for assisting in the preparation of high-quality breads, pastries, and baked goods in accordance with established recipes, production plans, and presentation standards. The role supports daily pastry kitchen operations by ensuring food safety compliance, consistency in quality, and efficient teamwork while maintaining a clean, safe, and professional work environment.

KEY RESPONSIBILITIES

  • Prepare breads and pastries, including doughs, fillings, proofing, baking, and basic decorating as directed.
  • Review daily production sheets to understand the variety and quantity of baked goods required.
  • Prepare and cook items according to standardized recipes, food preparation checklists, and presentation standards.
  • Monitor food quality and portion control throughout the shift to ensure consistency and reduce waste.
  • Maintain kitchen logs and records to support food safety and hygiene compliance.
  • Inform the Chef of excess or shortage of food items to support planning and daily specials.
  • Safely use baking tools, measuring equipment, and kitchen appliances in accordance with safety standards.
  • Follow all food safety and hygiene procedures, including personal hygiene standards.
  • Check and ensure correct temperatures of kitchen equipment and food items; report any issues to Supervisors immediately.
  • Maintain cleanliness of the pastry section and follow clean-as-you-go practices throughout the shift.
  • Support senior pastry team members and assist with daily kitchen operations as required.
  • Follow all company policies, procedures, and safety regulations; report accidents, injuries, or unsafe conditions promptly.
  • Maintain a clean, professional uniform and personal appearance at all times.
  • Communicate clearly and professionally with Supervisors and team members.
  • Protect company assets and maintain confidentiality of proprietary information.
  • Support teamwork and contribute positively to a cooperative working environment.
  • Carry out other reasonable duties as assigned by Supervisors.

QUALIFICATION AND EXPERIENCE

  • Certificate or Diploma in Pastry, Culinary Arts, Hospitality, or a related field is an advantage.
  • Previous experience in a pastry or bakery kitchen preferred.
  • Basic knowledge of baking techniques, food preparation, and hygiene standards.
  • Strong attention to detail, cleanliness, and food presentation.
  • Good communication and teamwork skills.
  • Willingness to learn and follow instructions from senior kitchen staff.
  • Ability to work flexible shifts, including weekends and public holidays.
  • Physically fit to meet job demands, including prolonged standing and lifting.
  • Ability to work independently and as part of a team.
  • Must have legal working rights in Fiji.
