Commis Chef – Kappo Restaurant

Location: InterContinental Sapporo

Every dish in our kappo restaurant tells a story — of seasonality, craftsmanship, and connection. As a Commis Chef, you will support our culinary team in delivering an intimate, refined Japanese dining experience, where precision, respect for ingredients, and attention to detail define every plate.

Working alongside experienced chefs, you will learn the artistry of kappo cuisine — from careful ingredient preparation to elegant plating — ensuring that each dish reflects the beauty of the season and the spirit of omotenashi.

Your dedication to quality, discipline in the kitchen, and passion for Japanese culinary traditions will help create unforgettable moments for our guests.

What you’ll be doing

• Prepare and present dishes that reflect the seasonality and elegance of kappo cuisine, ensuring exceptional taste and visual presentation
• Support senior chefs with ingredient preparation, including knife work, portioning, and mise en place
• Maintain the highest standards of cleanliness, hygiene, and food safety at all times
• Take ownership of your assigned station, ensuring ingredients and equipment are well-managed and waste is minimized
• Assist with dishwashing and other kitchen duties as required
• Work closely with the team to deliver a seamless and refined guest experience, especially in a counter-style, guest-facing environment
• Continuously learn and refine your skills in Japanese culinary techniques and presentation

What we need from you

• Experience in a professional kitchen; Japanese cuisine or fine dining experience is highly preferred
• Basic understanding of Japanese ingredients, seasonality, and culinary techniques
• Culinary qualification or relevant training
• Strong attention to detail and a commitment to precision and consistency
• Ability to work in a fast-paced, disciplined kitchen environment
• Team-oriented mindset with a willingness to learn
• Flexibility to work evenings, weekends, and public holidays
• Professional appearance and adherence to grooming and hygiene standards

当ホテルの割烹レストランでは、一皿一皿が季節の移ろいと職人技を映し出す特別な体験を提供します。
コミ・シェフとして、料理の基礎を支えながら、日本料理の繊細さとおもてなしの心を体現していただきます。

経験豊富なシェフのもとで、食材の扱いから盛り付けまで、割烹料理の技術と美意識を学び、季節感あふれる一皿を共に創り上げていきます。

細部へのこだわり、食材への敬意、そして丁寧な仕事が、ゲストにとって忘れられない時間を生み出します。

主な業務内容

• 季節感を大切にした割烹料理の調理・盛り付け補助
• 仕込み業務（包丁作業、下処理、食材準備など）のサポート
• 厨房内の衛生管理および食品安全基準の遵守
• 担当セクションの食材・備品管理およびロス削減
• 洗い場やその他キッチン業務のサポート
• カウンター形式など、ゲストとの距離が近い環境での円滑なサービス連携
• 日本料理の技術や知識の継続的な習得

求める人物像

• 調理経験をお持ちの方（日本料理・高級レストラン経験者歓迎）
• 日本の食材・旬・調理技術に対する基本的な理解
• 調理師学校卒業または同等の経験
• 細部にこだわる姿勢と品質への責任感
• スピード感のある環境での対応力
• チームワークを大切にし、学ぶ意欲のある方
• 夜勤・週末・祝日の勤務が可能な方
