About the Opportunity
In this role as a Pastry Chef, you will be responsible for assisting in the effective operation of the kitchen. This will be achieved by working as a team with other kitchen staff to provide the appropriate quality and level of pastry products and service to members, guests & visitors by adhering to RACV policies and procedures.

As a Commis Pastry Chef, your key responsibilities for the role include:
Checking the cleanliness of equipment and operation of premises before production runs to ensure compliance with occupational health and safety regulations
Checking the quality of raw materials and weighing ingredients
Kneading, maturing, cutting, moulding, mixing and shaping dough and pastry goods
Preparing pastry fillings
Monitoring oven temperatures and product appearance to determine baking times
Coordinating the forming, loading, baking, unloading, de-panning and cooling of batches of bread, rolls and pastry products
Glazing buns and pastries, and decorating cakes with cream and icing
Operating machines which roll and mould dough and cut biscuits
Emptying, cleaning and greasing baking trays, tins and other cooking equipment
Maintain knowledge of and deliver products and services to members, guests and visitors that are compliant with standard RACV operating procedures.
What you’ll need to be successful
Basic knowledge of food items and base cooking techniques.
Good knowledge of pastry.
Knowledge of the kitchen sections and associated service styles.
Knowledge of cleaning and hygiene procedures.
Understanding of stock rotation.
Thrive in a large, busy & fast paced work environment, with efficiency, organisation, time management and attention to detail
Strong communication skills, can follow direction and work well in a team environment
Committed and a passion for cooking with a strong focus on food quality and presentation
