Commis – Brasserie Astoria, Singapore

We are seeking passionate and dedicated Commis Cook to join our enthusiastic team at Brasserie Astoria, as we bring the iconic brasserie experience to Singapore.

Brasserie Astoria Singapore brings a unique blend of timeless sophistication and modern elegance to one of Singapore's most iconic landmarks, the Victoria Theatre & Concert Hall. With roots dating back to the 1800s, this beautifully restored heritage building stands as a symbol of Singapore's rich cultural history. The brasserie aims to recreate the international charm and refined atmosphere of its Stockholm counterpart, while embracing the vibrant energy of its Singapore setting. Here, we focus on offering guests an exceptional dining experience, anchored in warm, knowledgeable service and a carefully crafted menu, all within the grandeur of this historic venue.

Key Responsibilities:

1. Preparation of Ingredients

  • Assist in the preparation of vegetables, meats, fish, and other ingredients according to the chef’s instructions.
  • Clean, peel, chop, and portion ingredients as needed.
  • Ensure that all ingredients are stored correctly to maintain freshness and food safety.

2. Cooking and Plating

  • Assist in cooking dishes by following recipes and instructions from senior chefs.
  • Ensure consistency and presentation of dishes meets the high standards of the brasserie.
  • Plate food under the guidance of senior chefs, ensuring the aesthetics of each dish are maintained.

3. Maintaining Kitchen Cleanliness

  • Clean and sanitize workstations and kitchen equipment after use.
  • Follow proper cleaning schedules for the kitchen and surrounding areas to ensure a hygienic environment.
  • Dispose of kitchen waste according to hygiene and safety standards.

4. Assisting in Stock Management

  • Help check inventory levels for kitchen supplies and ingredients.
  • Ensure that items are properly stored and rotated to prevent spoilage.
  • Assist in receiving deliveries and managing stock levels in accordance with the restaurant's needs.

5. Ensuring Food Safety and Hygiene

  • Follow all food safety and health regulations in the preparation, storage, and handling of food.
  • Maintain cleanliness of kitchen tools, utensils, and equipment, and ensure safe food handling practices at all times.
  • Be familiar with allergens and dietary requirements to avoid cross-contamination.

6. Supporting Senior Chefs

  • Assist the sous chefs, chefs de partie, or head chef with daily prep work and service duties.
  • Follow the instructions of senior chefs to ensure all tasks are completed efficiently.
  • Learn and develop cooking techniques and knowledge under the supervision of experienced chefs.

7. Adhering to Restaurant Standards

  • Help ensure that the dishes prepared meet Brasserie Astoria's quality standards.
  • Maintain a high level of attention to detail in food preparation and service.
  • Ensure food is served at the correct temperature and in an appetizing manner.

8. Teamwork and Communication

  • Collaborate with the rest of the kitchen staff to ensure a smooth flow of service.
  • Communicate effectively with chefs and other kitchen staff, ensuring clear direction and support when needed.
  • Work well in a high-pressure, fast-paced environment, especially during peak hours.

9. Learning and Skill Development

  • Actively seek to improve cooking techniques, presentation skills, and kitchen knowledge.
  • Attend training sessions or workshops if available to enhance culinary skills.

Restaurant Frantzén’s Kitchen was opened in Hong Kong and has since won several awards and is currently ranked as one of the best restaurants in the country. In late 2018 Zén, which is a sister restaurant to Frantzén in Stockholm, opened in Singapore, and in 2021 Zén was awarded three stars in Guide Michelin.
