We are representing our client a well-established Halal & HACCP pastry and bakery manufacturer which distribute and supplies broad variety of bakery and pastry products to various customers such as F&B convenient stores, F&B outlets and eateries and airlines.

They are currently embarking expasion plans and in a lookout for qualified and dynamic candidates to fill the Chief Baker (2 vacancies) position.

Main Responsibilities

1. Bread Production Management:
Oversee all aspects of bread production within the manufacturing facility, including dough preparation, shaping, proofing, baking, and finishing, while ensuring adherence to quality standards, production schedules, and food safety regulations.

2. Recipe Development and Standardization:
Develop, refine, and document recipes for a variety of bread products, including artisanal loaves, rolls, baguettes, sourdough, specialty breads, and gluten-free options, ensuring consistency, quality, and cost-effectiveness in large-scale production.

3. Ingredient Management:
Manage ingredient sourcing, procurement, and inventory control for bread production, including selection of flours, grains, yeast, and other ingredients, while optimizing costs, minimizing waste, and ensuring availability of high-quality ingredients.

4. Equipment Operation and Maintenance:
Oversee the operation and maintenance of bread production equipment and machinery, including mixers, ovens, proofers, sheeters, and slicing machines, ensuring optimal performance, safety, and cleanliness.

5. Production Planning and Scheduling:
Develop production schedules, manage production capacity, and coordinate with other departments to meet production goals and customer demands, while optimizing efficiency and minimizing downtime.

6. Quality Control:
Monitor bread production processes and products to ensure adherence to recipe specifications, quality standards, and food safety regulations, conducting regular inspections and implementing corrective actions as needed.

7. Team Leadership and Training:

Provide leadership, direction, and training to bread production staff, including bakers, mixers, proofers, and assistants, fostering a culture of excellence, teamwork, and continuous improvement.

8. Continuous Improvement:
Identify opportunities for process optimization, efficiency improvements, and product innovation in bread production, and contribute to the implementation of solutions to enhance productivity, quality, and profitability.

9. Sanitation and Safety:
Ensure compliance with all relevant food safety regulations, industry standards, and company policies, maintaining a clean, sanitary, and safe work environment for all staff involved in bread production.

10. Building talent:
Developing and nurturing the skills, knowledge, and capabilities of bakery staff to ensure they perform effectively and contribute to the success of the bakery manufacturing operation

Requirements:

  • Certification in baking or pastry arts.
  • Proven experience working as a baker or chief baker in a bread manufacturing or large-scale production environment.
  • Comprehensive knowledge of bread production techniques, ingredients, and equipment.
  • Strong leadership and team management skills, with the ability to motivate, develop, and empower staff.
  • Detail-oriented with a focus on quality, consistency, and efficiency in bread production.
  • Effective communication, problem-solving, and decision-making skills.
  • Ability to work independently and collaboratively in a fast-paced, deadline-driven environment.
  • Flexibility to work shifts, including evenings, weekends, and holidays, as needed.
