Join the team behind one of Asia’s most acclaimed dining experiences. Restaurant Zén, the sister restaurant of the 3-Michelin star Frantzén in Stockholm, is looking for a passionate and detail-driven chef to join our fermentation department in Singapore.
Housed in a beautifully restored heritage shophouse, Zén offers an immersive tasting menu experience across three levels, combining Nordic precision with Asian nuance. The fermentation department plays a vital role in curating our non-alcoholic beverage pairings, with a focus on house-made kombuchas, blended juices, and other innovative ferments that complement and elevate the dining journey.
About the Role
As a Chef in the Fermentation Department, you will be responsible for the development, production, and maintenance of our kombuchas, juices, and other non-alcoholic beverages served as part of Zén’s pairing menu. Working closely with the Head Sommelier and kitchen leadership, you will ensure each drink is crafted with precision, consistency, and creativity, reflecting the seasonal philosophy of the restaurant.
What We’re Looking For:
Fermentation Expertise: Experience working with kombucha, fermented beverages, and juice blends, with an understanding of fermentation science and safety.
Culinary Craftsmanship: Solid kitchen background, ideally in a fine dining or high-end hospitality environment.
Creativity & Seasonality: Ability to innovate with flavours, techniques, and presentations that align with Zén’s menu and philosophy.
Organisation & Precision: Strong mise-en-place discipline, attention to detail, and ability to maintain fermentation logs and production schedules.
Collaborative Spirit: Enjoys working closely with service and kitchen teams to achieve a seamless pairing experience.
Commitment to Learning: Willingness to expand product knowledge and refine techniques through research and experimentation.
Key Responsibilities:
Produce, monitor, and maintain a variety of kombuchas, fermented infusions, and blended juices for the restaurant’s non-alcoholic pairing.
Ensure consistency in flavour, clarity, and presentation across all beverages served.
Collaborate with the Head Sommelier and culinary team to design seasonal pairing menus that harmonise with Zén’s tasting menu.
Maintain fermentation logs, ingredient inventories, and production schedules to guarantee smooth daily operations.
Uphold the highest standards of hygiene, food safety, and workplace cleanliness in all fermentation processes.
Participate actively in tastings, menu development sessions, and internal trainings to continuously refine beverage offerings.
Monitor and troubleshoot fermentation processes to prevent spoilage or inconsistency.
