The opportunity

Delaware North Australia is hiring a full-time Chef de Cuisine to join our team at Mindil Beach Casino Resort in Darwin. As Chef de Cuisine, you will lead our bustling kitchen operations at The Vue restaurant and oversee culinary operations for in-room dining, VIP Bar, Sportsbar, Infinity and Lagoon.

What you will do?

• Oversee the daily operations of the kitchen, with responsibility across The Vue, in-room dining, VIP Bar, Sportsbar, Infinity and Lagoon
• Develop innovative menu concepts that align with current food trends and guest preferences
• Provide strong leadership, mentorship and hands-on training to foster a high-performing, motivated team
• Set and uphold exceptional food standards through efficient systems and processes
• Assist in managing department budgets, food costs, utilising IT systems to drive efficiency and profitability
• Manage performance and labour costs for permanent and casual kitchen staff
• Champion on-site food safety and HACCP accreditation

More about you

• Proven experience managing large-scale kitchen operations
• Experience across either high end restaurants (hatted preferred) and/or functions
• A strong track record of leading and inspiring diverse culinary teams
• Expertise in menu development, stock management, and cost control
• Strong commercial acumen with a track record of delivering business outcomes
• Relevant culinary qualifications
• Proficiency in business technology, including stock control systems, spreadsheets, and accounting software
• Excellent communication and leadership skills, with the ability to engage at all levels

Remuneration on offer $110K - $120K + superannuation.
