Chef de Cuisine is responsible for leading daily operations in The Restaurant kitchen, ensuring consistent food quality, managing the back-of-house team, and upholding food safety and sanitation standards while meeting cost and service goals.

What Success Looks Like:
Your Impact
• Oversee the Restaurant kitchen operations during service, including station setup, prep, execution, and close
• Supervise, train, schedule, and coach The Restaurant kitchen staff; maintain clear standards, accountability, and teamwork.
• Maintain recipe, portion, plating, and ticket-time standards to ensure consistent food quality.
• Collaborate with leadership on menu development, specials, tastings, and seasonal updates.
• Manage food and labor costs through forecasting, ordering, inventory control, prep planning, and waste reduction.
• Ensure compliance with food safety, allergen, and sanitation requirements (e.g., HACCP principles, local health codes).
• Conduct line checks and quality audits; address guest feedback and remake items as needed.
• Coordinate with front-of-house to ensure smooth communication, pacing, and service recovery.
• Maintain equipment functionality and cleanliness; submit maintenance requests and ensure safe use.
• Complete required logs and documentation (temps, receiving, cleaning schedules, incident reports).
What You Bring
• Proven leadership experience in a high-volume, quality-driven kitchen (Sous Chef or Chef de Cuisine level).
• Strong knowledge of cooking fundamentals, knife skills, sauces, stocks, and multiple stations.
• Working knowledge of food safety, sanitation, allergen controls, and safe food handling practices.
• Ability to plan and prioritize in a fast-paced environment while maintaining calm, professional communication.
• Competency in ordering, inventory, costing, and basic kitchen financial controls.
• Availability to work nights, weekends, and holidays as business requires.
• Culinary degree or equivalent professional training.
• ServSafe (or local equivalent) Food Protection Manager certification.
• Experience with menu engineering, banquet/catering execution, or multiple concepts/cuisines.
• Familiarity with purchasing systems, scheduling tools, and kitchen management software.
• Demonstrated success improving food cost, labor efficiency, and guest satisfaction metrics.
Native American/Alaskan Native preference applies under applicable TERO requirements.
