What you’ll be responsible for

  1. Managing all aspects of food preparation, service and delivery within a seasonal retail catering environment to ensure an exceptional food service quality
  2. Ensuring as a department the delivery of a high-quality product / offering, to service meetings, events customer requirements and market trends
  3. Complete food orders, menus costing and theoretical GP on all products to allow comparison to actual, whilst achieving target GP overall
  4. Ensure food hygiene and safety guidelines are adhered to at all times, in line with EHO regulation and local authority guidelines
  5. Leadership and management of a team of highly motivated permanent and seasonal employees to achieve KPIs and deliver exceptional customer service at all times
  6. Development of the catering team through methods such as regular team meetings, 1:2:1, inductions and development plans. Working on a strong succession plan.
  7. Develop the service offering and deliver excellent customer service, look for best in class fresh, local produce
  8. Become renowned for quality of product and service within the region to develop new customer streams and return visitors
  9. Ensure all HACCP documentation is kept up to date at all times whilst maintaining / improving hygiene scores, upkeep and cleanliness of the kitchen, restaurant & associated stores, managing Health and safety in line with DCWW procedures (for both internal and external customers)
  10. Engage with customers as an ambassador of Welsh Water
  11. To develop and regularly review operations manuals, service standards for the site, wastage, monthly food GPs staffing levels, costs and controls. Stock rotation mandatory record keeping
  12. Responsible for EPOS updates stock control and stock takes, supplier orders
  13. To be proactive in the development of menus, the food & beverage offer an events program and service delivery
  14. Supporting the delivery of a marketing communications plan to grow awareness, drive footfall and commercial revenue streams, monitor media streams and feedback scores to develop a customer focused product and offer a point of difference
  15. Contribute to an annual events programme in conjunction with other team members to grow visitors and revenue; and delivery of the programme to exceed budget
  16. To be operationally highly visible and active to undertake duty manager activities for the site
  17. Carrying out any other duties as required to meet business needs.

About you

Essential Knowledge, Skills and Experience

  1. Demonstrable experience in Catering / Cafe operations using fresh locally sourced produce
  2. Practical Health & Safety experience in a retail or café environment
  3. Excellent customer service skills, from a customer focused background with the ability to communicate at all levels
  4. Knowledge of regulatory requirements associated with food hygiene licensing law, Premises licence, PMR, PRL, EHO, trading standards
  5. Proven track record of managing developing and maintaining a team to meet customer and business needs
  6. Proven track record of growing income across a food and beverage operation
  7. Demonstrable experience of food service & food production in a establishment to a set standard, exceeding expectations and customer perception
  8. Develop and cost menus, manage food orders, and monitor theoretical vs. actual GP to stay within budget. Manage operational controls, including tills, cash reconciliation, stock management, staffing levels, and cost controls.
  9. Proficient IT skills – MS Word, Excel, Outlook
