Key responsibilities include:
Supervise daily butcher operations, ensuring proper cutting, portioning, preparation, and storage of meat, poultry, and seafood in line with quality and hygiene standards.
Ensure compliance with food safety, hygiene, and sanitation regulations (HACCP and local regulations).
Monitor receiving, inspection, storage, and rotation of all butcher products to ensure freshness, quality, and cost control.
Manage inventory levels, minimize waste, and control food cost through accurate portioning and yield management.
Train, coach, and supervise butcher team members to ensure high performance and skill development.
Coordinate closely with Kitchen, Purchasing, Stewarding, and F&B teams to ensure smooth daily operations.
Ensure all equipment and tools are properly used, cleaned, and maintained.
Maintain cleanliness, organization, and safety of butcher areas, cold rooms, and storage facilities.
Handle special requests, banquet preparations, and high-volume production efficiently.
Prepare daily production plans, reports, and inventory records.
Support Executive Chef and Executive Sous Chef in achieving quality, hygiene, and cost objectives.
Perform other duties as assigned by Management.
Responsible Business & Compliance
All operations will be conducted ethically, transparently, and in compliance with local laws and company policies. I will ensure a safe and secure environment for guests, hosts, and assets while maintaining positive relationships with local communities and stakeholders.
Skills & Experience
The role requires:
Diploma or vocational qualification in Culinary Arts, Food Processing, or related fields.
Minimum 3 years of experience in butcher operations, preferably in luxury hotels, resorts, or high-volume kitchens, with at least 1–2 years in a supervisory role.
Strong knowledge of meat cutting techniques, portion control, yield management, and food safety standards.
Good leadership, training, and team management skills.
Good understanding of HACCP, hygiene, and sanitation standards.
Good communication skills; English is an advantage.
I maintain a thorough understanding of Six Senses brand standards, operational guidelines, and service philosophy.
