Assists Lead Butcher in proper fabrication of all meats, fish and poultry to hotel specifications. Cuts, trims, bones, ties, and grinds meats, using butcher's cutlery and powered equipment, such as electric grinder and band saw, to portion and prepare meat in cooking form. May estimate requirements and requisition or order meat supply. May receive, inspect and store all products upon delivery. May record quantity of meat received and issued to cooks. May clean fowl and fish.

Ability to use hand tools, stand or walk for extending periods, lift heavy items, and work in cold environments
Knowledge of meat preparation techniques and cuts

ADDITIONAL REQUIREMENTS
Working environment will be continuously cold. Working with kitchen equipment where being safety conscious is required. Working in area where liquid and grease spills are most likely to occur.
Must be able to sort, write and count in English.
Must be able to push/pull and lift/carry 50 pounds unassisted.
Must be able to work overhead. Must be able to tolerate repetitious hand/arm/wrist movements. Must be able to stand, walk and on feet for many hours at a time.
Must be able to grasp objects. Must be able to tolerate long periods of knife use.
Must have the ability to shift back and forth between 2 or more activities in a timely manner and the ability to complete each.
