Job Description

It is the primary responsibility of the Beverage General Manager to maintain the high standards of the property and support the objectives of the Food and Beverage Division, including supervising the Beverage department to ensure proper service to customers. All duties are to be performed in accordance with departmental and property policies, practices, and procedures.

Specific Job Functions:

  • Assist in administration and planning for the Beverage Department to ensure the bars are current in product, pricing, service and image
  • Initiate training of supervisors and hourly staff designed to provide the highest levels of proficiency, efficiency, and confidence in the delivery of service to guests
  • Establish operating policies and staff schedules for the operation of all bars and Casino Cocktail Servers in order to achieve maximum service at desired profit levels
  • Describe, assign and delegate authority clearly and responsibility for the operation of the Bars and Casino Cocktail Servers under his/her supervision.
  • Conduct weekly communications meetings, utilizing key reports, to ensure all staff are aware of goals, objectives and activities within the property and department
  • Maintain and instill in supervisors and staff a high concern for effective control of food, beverage and labor costs
  • Assist subordinate managers in establishing and achieving predetermined profit objectives and desired standards of quality of beverages, service, cleanliness, and promotions.
  • Develop budgets, forecasts, purchase specifications, operating equipment needs, beverage production control, job descriptions and other department criteria and standards
  • Evaluate the performance of the Assistant Managers assigned to the Beverage Department.
  • Monitor service levels in the bars, lounges and on the casino floor by adjusting to business levels as needed
  • Administer a human resources development program within the unit which will provide well-trained employees at all levels and permit advancement for those individuals qualified and interested in improving their position
  • Maintain adherence to policies and procedures set forth by the company relating to employment, environmental health and safety as well as laws relating to the operation of food and beverage.
  • Achieve all service, financial, and human resource goals set forth by company executives
  • Perform all duties deemed necessary for the success of the department
  • Achieve and maintain standards in quality of all beverage services
  • Maintain staffing levels to ensure adequate departmental coverage at all times
  • Communicate all departmental needs to the Directors of Food and Beverage
  • Assist the Director of Beverage in developing Beverage Programs, drink menus and promotions in all bar and restaurants
  • Maintain accurate and adequate employee records, ensure all employee relation issues are handled in a professional manner and issue commendations and disciplinary action as necessary
  • Oversee orders and maintain par levels of inventory
  • Reduce waste and breakage of all products by helping to maintain a safe working environment for employees
  • Conduct meetings and relay pertinent information to the staff prior to starting shifts
  • Ensure all staff have the necessary gaming permits before clocking in
  • Manage, monitor and mentor staff to ensure they are following proper policies and procedures
  • Achieve all service, financial, and human resource goals set forth by company executives
  • Perform all duties as deemed necessary for the success of the department

Qulifactions

  • Minimum 5 years’ experience managing a high-volume hotel/casino beverage department required
  • Thorough knowledge of all aspects of Beverage Operation with quality organizational skills a must
  • Knowledge and experience in various points of sale systems and associated technology
  • Knowledge of all beverage equipment necessary
  • Excellent communication skills required
  • Able to communicate in English both verbally and written forms essential
  • Previous hands-on experience in presenting beverage training and development of new programs
  • Must possess basic computer skills including Word, Excel, Outlook and Access
