The Banquet Captain is responsible primarily for supervising banquet staff in serving, setting-up, and clean-up of all banquet functions. This is a fast paced position that will involve constant customer interaction.

Essential Functions

  • Directing Banquet Team Members in serving, setup, maintenance and breaking down of banquet rooms
  • Supervises, guides, schedules and trains banquet team members.
  • Ability to follow directions from banquet event orders
  • Supports proper grooming and dress code for department personnel.
  • Ensures that food handling and safety guidelines are in effect and followed.
  • Ensures that proper cash control and key control programs are followed.
  • Conducts interviews and influences hiring and firing decisions.
  • Ability to carry large and heavy trays on a continuous basis throughout a shift.

Guest/Food Service

  • Ensures that all guests are dealt with in a professional, consistent manner.
  • Monitors and inspects all food & beverage deliveries, ensuring portion controls are adhered to.

Revenue and Financial

  • Processes gratuities and banquet charges

Miscellaneous

  • Maintains a positive work atmosphere by acting and communicating in a manner so that facilitates getting along with guests, clients, co-workers, and management.
  • Provides a safe working environment by ensuring compliance with safety programs, Health Department requirements, and job safety analysis.
  • Maintains and enforces sanitation laws and safety standards with anyone entering the kitchen area.
  • Inspects food and beverage outlets for proper storage, neatness, and rotation of inventory.
  • Performs all other duties as directed developed, or assigned.

Knowledge and Critical Skills/Expertise

  • Language Skills: Ability to read, write, and verbally communicate in English. Ability to communicate effectively and professionally with other departments, Guests, and vendors. Ability to diplomatically handle difficult situations and people.
  • Technical Skills: Food preparation and service skills required. Basic computer skills including word processing, spreadsheets, and email.
  • Reasoning Ability: Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, report, or schedule form.
  • Certificates, Licenses, Registrations: Food handler's permit.
  • Other Skills and Abilities: Able to work with little or no supervision. Operate equipment such as, but not limited to, food service equipment and software, printers, fax machine, and copiers.
  • Knowledge of A/V equipment
  • Ability to work flexible hours including evenings, weekends, and holidays.

Experience

  • No educational requirement.
  • Hotel banquet food service experience required.
  • Supervisory experience required.

Environmental Conditions

  • Regularly works near moving mechanical parts
  • Frequently exposed to fumes or airborne particles, and toxic or other chemicals
  • The noise level in the work environment is usually loud

Physical Demands

  • Seeing - Must be able to see well enough to read reports, drive, and use a computer.
  • Hearing - Must be able to hear well enough to communicate on the phone and in person.
  • Standing/Walking/Mobility - Must be able to stand to operate office machinery. Must be able to move between departments.
  • Climbing/Stooping/Kneeling - Must be able to climb four flights of stairs. Must be able to stoop and kneel for short periods of time.
  • Lifting - Must be able to lift up to 50 pounds.
  • Fingering/Grasping/Feeling - Must be able to write, type, and use the phone system.

  • This position is Non-Exempt and eligible for overtime in accordance with federal FLSA and California wage and hour requirements.
