Purpose

To manage and control the overall bakery operations by ensuring the production of fresh, high-quality products, maintaining food safety standards, and delivering excellent customer service to drive profitability.

Qualifications & Experience

• National Senior Certificate (Grade 11/12)
• Minimum 3 years’ bakery or confectionery experience
• Minimum 1 year supervisory experience

Advantageous

• Experience with ARCH/SAP systems
• Strong knowledge of bakery production and merchandising

Key Responsibilities

Bakery Operations & Production

• Oversee bakery production and ensure product quality and availability
• Ensure recipes, production schedules, and standards are followed
• Manage preparation and display of all bakery items

Stock & Merchandising

• Control stock levels, ordering, and stock rotation (FIFO)
• Maintain QDVP4 standards and product availability
• Minimise waste, shrinkage, and expired stock

Sales & Performance

• Achieve sales, turnover, and gross profit targets
• Drive promotional activity and product availability
• Monitor and resolve stocktake variances

People Management

• Supervise, coach, and develop team members
• Manage staff scheduling, attendance, and performance
• Enforce discipline and company standards

Health, Safety & Hygiene

• Ensure food safety and hygiene standards are maintained
• Monitor cleanliness, equipment use, and temperature controls
• Maintain a safe working environment
