Job Title: Assistant Manager - Single Malt Quality
About the role:
Role Responsibilities:
1. Malt Plant Operations & Fresh Malt Spirit (FMS)
• Support day-to-day malt plant operations including malting, milling, mashing, fermentation, and distillation as per defined protocols.
• Assist in maintaining operational discipline to achieve quality, safety, and cost targets.
• Implement SOPs and work practices focused on minimizing wastage and controlling process variability.
• Provide inputs for identifying Capex requirements and support technical evaluations and implementation.
• Monitor FMS quality parameters daily—alcohol strength, sensory cues, chemical analysis & GC congener data—and escalate deviations.
• Conduct routine GC analysis and ensure adherence to analytical specifications.
• Coordinate changeovers between batches including CIP verification, sanitation, and contamination checks.
• Maintain documentation and update daily process records through mashing, fermentation, and distillation operations.
• Conduct daily basic sensory checks and support detailed FMS sensory evaluations under Manager’s guidance.
2. Quality Systems, Sensory Evaluation & RCA/CAPA
• Conduct scheduled sensory evaluations of FMS, in-process liquids, and matured spirits.
• Maintain sensory logs, panel scores, and trend records with accuracy.
• Participate in root cause analysis (RCA) for process and quality deviations and support the implementation of CAPA actions.
• Ensure audit readiness by maintaining quality documentation, regulatory records, and compliance data.
• Support continuous improvement initiatives using DMAIC, FMEA, SPC, and other problem‑solving tools.
3. Maturation Management & Warehouse Quality
• Assist in managing cask inventory in compliance with company policies.
• Perform routine cask inspections for leakage, defects, microbial activity, and wood integrity.
• Support daily disgorging operations—sampling, testing, record maintenance.
• Monitor warehouse conditions (temperature, humidity, angel’s share) and escalate abnormalities.
• Help maintain working capital by monitoring stock levels and minimizing evaporation losses.
• Support cooperage-related activities, ensuring adherence to wood management best practices.
4. Blending Operations & Stock Quality Management
• Support blending operations as per approved formulations and quality guidelines.
• Maintain blend component records and assist in ensuring batch consistency using historical data.
• Coordinate with planning and production teams for blend readiness in line with bottling schedules.
• Conduct pre-blend and post-blend testing—stability, haze, filtration impact, and sensory checks.
5. Bottling Line Quality Assurance
• Inspect packaging material (bottles, corks, labels, cartons) before usage.
• Conduct online quality monitoring during bottling—line start-up checks, fill volume, sealing quality, glass integrity, label placement, etc.
• Record defects using digital systems and support initiatives to reduce line rejections.
• Analyze quality trends and share observations with the Manager for corrective action.
6. Finished Goods Quality & Dispatch
• Carry out routine finished goods checks—visual, ABV, sensory, and packaging integrity.
• Support end-of-line quality clearance as per standards and coordinate movement to FG warehouse.
• Perform pre-dispatch inspections to ensure product quality and documentation accuracy.
• Maintain traceability records and ensure all dispatch documentation complies with regulatory norms.
• Assist in preparation of dashboards, trend charts, GC analysis records, and monthly quality summaries.
• Support digital tools like MIS, LIMS, and QMS for quality monitoring and audit compliance.
7. People Management & Cross‑Functional Coordination
• Support training initiatives and help build team capabilities in sampling, hygiene, GMP/GHP, and testing methods.
• Ensure adherence to ISO 9000/22000 & UFPS standards across processes.
• Participate in cross‑functional improvement initiatives with operations, engineering, supply chain, and packaging teams.
• Mentor junior team members on routine tasks, safety, and quality protocols.
• Ensure compliance with local Excise requirements and maintain accurate documentation.
Experience / skills required:
Qualification:
Postgraduate in Chemistry / Microbiology/Bio- chemistry/Biotechnology/Food technology/Alcohol Technology. Preferably with additional qualification of IBD courses on distillation / brewing etc.
Experience
2-4 years of experience in the areas of Process in Distillery, Brewery, Ethanol Distillation process etc.
Knowledge & skills:
Hands-on experience and in-depth knowledge of quality management systems, developing quality related SOPs and its control
Experience in handling quality improvement projects
Knowledge of Microsoft Office package
Internal auditor for ISO 9001, ISO 22000, etc.
