The Assistant Food & Beverage Manager supports the Director of Food & Beverage in the overall operation, administration, and performance of all food and beverage outlets, excluding Raffles Marquee, Banquet, and Pool operations. The role ensures exceptional guest experiences, operational excellence, team engagement, and achievement of financial and quality objectives in line with the standards of the Raffles Grand Hotel d’Angkor.

Operational Management

  • Assist in managing the daily operations of all assigned F&B outlets to ensure smooth and efficient service.
  • Maintain exceptional service standards in accordance with hotel and brand expectations.
  • Monitor guest satisfaction and ensure prompt handling of guest feedback and service recovery.
  • Conduct regular outlet inspections to ensure cleanliness, ambiance, hygiene, grooming, and operational readiness.
  • Coordinate closely with Kitchen, Stewarding, Purchasing, Housekeeping, and other departments to ensure seamless operations.
  • Ensure compliance with food safety, hygiene, sanitation, and health & safety standards.
  • Support the implementation of promotional activities, seasonal events, and outlet initiatives.

Financial & Administrative Responsibilities

  • Assist in achieving budgeted revenue, profit, and cost control targets.
  • Monitor payroll productivity, operating expenses, and inventory usage.
  • Review daily sales reports and operational performance indicators.
  • Support inventory management, stock control, and monthly F&B stock takes.
  • Ensure proper control procedures are followed in accordance with hotel policies.
  • Participate in forecasting, budgeting, and action planning activities.

Leadership & Team Management

  • Supervise and support outlet managers and team members across assigned outlets.
  • Lead by example and promote a positive and professional work environment.
  • Conduct training, coaching, and performance follow-up to enhance team capability and service quality.
  • Assist with recruitment, onboarding, scheduling, and performance evaluations.
  • Ensure effective communication and teamwork among all F&B colleagues.
  • Promote employee engagement and uphold company values and culture.

Guest Experience

  • Maintain a visible presence in the outlets during operating hours.
  • Build strong relationships with guests and recognize VIPs and repeat guests.
  • Ensure personalized and memorable dining experiences are consistently delivered.
  • Handle guest complaints professionally and efficiently.

Qualifications

  • Diploma or Degree in Hospitality Management, Food & Beverage Management, or related field preferred.
  • Minimum 3–5 years of experience in Food & Beverage operations, including supervisory or management experience in luxury hotels or upscale restaurants.
  • Strong operational knowledge of restaurant and bar management.
  • Excellent leadership, interpersonal, and communication skills.
  • Strong understanding of financial management, budgeting, and cost control.
  • Ability to work in a fast-paced environment and manage multiple outlets effectively.
  • Good command of English; additional languages are an advantage.
  • Proficient in Microsoft Office and POS systems.
