Picture yourself brightening someone’s day. When you join our Hotels team, that’s exactly what you’ll do every time you come to work! As Assistant Bars & Beverage Manager, you are responsible all beverage offerings of the hotel, from cocktails and spirits, wines and champagnes, and non-alcoholic items. Working with the Assistant Director of Food & Beverage or Director of Food & Beverage to create world class beverage offerings in the hotel’s signature bars. Recruiting and developing the beverage team including but not limited to bartenders and Head Mixology, to deliver an exception experience to guests. Assistant Beverage & Bars Manager will also be required to assist in achieving department targets.
Here's what you'll do during a typical day:
- Curate and elevate our beverage programs: Lead the development and execution of beverage programs across all outlets, with a particular focus on the Cocktail Lab and Eden Champagne & Gin Bar, ensuring innovative, high-quality, and commercially successful offerings.
- Deliver exceptional beverage experiences: Provide guests with professional and up-to-date knowledge of all beverages, confidently recommending cocktails, wines, spirits, and other beverages to complement their dining experience. Proactively describe and upsell beverages while maintaining a genuine focus on hospitality and guest satisfaction.
- Drive beverage revenue and profitability: Develop and implement monthly and annual beverage marketing plans based on market and consumer trends. Introduce creative promotions, sales initiatives, and beverage strategies to increase revenue while achieving departmental budgets and profitability targets.
- Develop beverage menus and concepts: Collaborate on new menu development and recommend beverage pairings that complement food offerings while remaining aligned with financial budgets, guest preferences, and the overall positioning of the resort.
- Lead and develop the beverage team: Build, coach, and develop a high-performing beverage team capable of consistently delivering excellent products and service. Support recruitment, selection, onboarding, orientation, training, performance assessments, and ongoing professional development.
- Optimize staffing and daily operations: Assess staffing requirements according to operational needs and assist with creating effective schedules and rosters to ensure appropriate levels of service while maintaining operational efficiency.
- Manage beverage costs and inventory: Monitor stock levels, conduct inventory controls, and manage beverage costs in line with departmental targets. Identify opportunities to minimize waste, improve controls, and maximize profitability.
- Maintain accurate revenue and billing: Ensure accurate billing and daily revenue reporting, promptly identifying and reporting any discrepancies. Work toward achieving departmental financial targets and budgets in collaboration with the Assistant Director of Food & Beverage and Director of Food & Beverage.
- Ensure responsible and compliant beverage service: Ensure all alcoholic and non-alcoholic beverages are served responsibly and in accordance with applicable licensing, liquor, health, safety, and food hygiene regulations.
- Maintain service, safety, and operational standards: Ensure all bars and beverage areas consistently follow hotel standards, food safety and hygiene procedures, security requirements, fire regulations, and safe working practices to protect the health and well-being of guests and team members.
- Strengthen training and service standards: Ensure outlet orientation materials and training manuals remain current and support the implementation of standards training, assessments, and ongoing development to maintain consistent service excellence.
- Support the overall success of the resort: Work collaboratively with Food & Beverage leadership and other departments to continuously improve beverage operations, guest satisfaction, team performance, and commercial results, while undertaking other reasonable duties and responsibilities as required.

An Assistant Bars & Beverage Manager serving Hilton brands are always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:
- 2-3 years of experience in a similar capacity in international chain hotels.
- Excellent command of written and spoken in English to meet business needs.
- Good organization and coordination skills.
- Good communication skills, both verbal and written.
- Good relationship with the local labour bureau and government agencies.
- Thorough knowledge of federal, state and local laws.
- Thorough knowledge of payroll, salary, employment and benefits administrations.
- Must possess basic computational ability.
- Able to maintain excellent relations with associates and team members as well as guest confidentiality at all times.
It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:
- Experience as Assistant Beverage Manager or Head Mixology.
- Previous experience managing a bar program in a freestanding or hotel operation.
- Strong background in cocktails/mixology, and comprehensive knowledge of current trends
- Comprehensive understanding of wine, minimum of WSET level 2
