Job Description

The Repulse Bay is seeking an Asian Chef to support kitchen operations at Spices, our renowned Southeast Asian cuisine restaurant.

Key Accountabilities


  • Promote Spices as a recognized culinary destination by creating memorable guest experiences through craftsmanship, customer communication, and an uncompromising passion for excellence.

  • Make recommendations to the Executive Chef on activities, promotions, and menus, and implement them in line with annual marketing plans.

  • Manage food production and ensure all dishes consistently meet expected quality standards.

  • Assist with cost control and reduce food waste.

  • Ensure adherence to HACCP standards, maintaining personnel, physical, and environmental hygiene; supervise daily grooming of departmental employees.

  • Develop, motivate, supervise, and coach departmental staff to foster a culture aligned with our mission, vision, values, and core HSH principles.

General Requirements


  • Approximately 3–5 years of relevant experience gained from a luxury hotel or similar establishment, with Southeast Asian cuisine exposure.

  • Sound knowledge of food and beverage operations and production skills.

  • Strong experience in menu planning and cost control.

  • Knowledge of HACCP systems and ISO 22000 is an advantage.

  • Strong leadership and interpersonal skills.

  • Innovative, open-minded, and proactive.

  • Good command of spoken and written English.
